Gluten Free Spanish Pork & Patatas Bravas
Mmmmmmmmm we love nice pork chops, they must be outdoor bred and reared (just putting outdoor bred on the packet doesn't mean much does it?!, surely this means the pigs just did the business in a field?), and if possible organic too. I'm not going to do a full blown recipe for this, as its so simple. Pork Chops, rubbed with paprika, olive oil and lemon juice. Potatoes, steamed then fried in a pan with a little olive oil. Spicy Tomato Sauce, one small onion and one garlic clove, chopped and fried, then add some paprika, a little cayenne pepper and a tin of chopped tomatoes. I gridded my chops, keep them nice and still in the griddle and you will get lovely lines like this. Also, de-glaze your pan with just a little water while your chops rest to make a lovey jus to pour over the chops, no thickening required.
This weekend I also did a full sunday chicken dinner. The only problem areas with this dinner is the stuffing and the gravy. Oh and bread sauce, but I don't eat that gloop. So skip the stuffing and season your chicken with loads of herbs, or make your own with a grated frozen GF muffin or something. GF stuffing in a packet is horrid, its made with rice flakes which just doesn't work at all. Only thicken the gravy with corn flour, and only use a GF stock cube if it needs more flavour. The rest of your chicken dinner, the potatoes, parsnips, carrots, sweetcorn and things are all naturaly GF anyway, yay! No picture of the chicken as I just wanted to eat it!
For lunch yesterday we had cheesy pasta, crisped up under the grill. I just boiled up some GF corn penne pasta, drained it then mixed it with cream cheese, grated cheddar, grated Parmesan and some dolcelatte, and made it runny with some of the reserved pasta water. Bung this in a dish, sprinkle over a bit more Parmesan and grill till brown. Ummmm not very healthy, but yummy! It's sort of like macaroni cheese, but bigger pasta, and nicer sauce. The husband doesn't eat macaroni cheese though, so I'm naming this dish cheesy pasta bake.
