Gluten Free Tiramisu

Tiramisu is one of my favourites, but of course incorporates biscuits of some sort into the base. So I need an alternative. Well LifeStyle Healthcare sent me a sample box of their products a few weeks ago, which included a lovely lemon cake.

I had eaten half of it, and it had become rather dry, so it made a perfect base for Jamie Olivers Tiramisu recipe. His recipe uses orange juice and zest, with a grated chocolate topping, and this went perfectly with the lemon cake base. I bunged Cointreau instead of vin santo, added to the lovely orangeness of it all

In my LifeStyle Healthcare sample box were some of their other products. They sent me some gluten free but not wheat free bread which made me poorly, as it did my mother, the gluten free but not wheat free crumpets were amazing, but had the same affect.

Lemon cake was yummy, my mum froze hers so I think I will steal it to make another Tiramisu. Pastry things came too, like little bakewell tarts, and although these were ok I wouldn't buy them again as I don't really miss pastry anyway.
