GF Rhubarb Fool
Mmmmm more rhubarb, I love the stuff. Rhubarb fool is soooo yummy I could eat it till I turn rhubarb pink.
Here is a little recipe for four nice big glasses of rhubarb fool, the best GF way to eat the stuff I think.
rhubarb 800gms, washed and cut into 5cm lengths
oranges 2, zested and juiced
caster sugar 6 tablespoons
greek yogurt 500 gms
double cream 200 ml
runny honey 1 tablespoon
Put rhubarb, sugar, orange juice and zest in a casserole dish and bung in the oven for 45 mins on a medium heat, uncovered for the last 15 mins. Check now and then and stir around, it should all cook down lovely. When its all squishy have a taste and add more sugar if you like. Plop it all in a metal sieve over a bowl and sieve out the runny stuff, don't push it through though, its still to be a bit wet. Cool this mixture in the fridge for a hour or so.
When your rhubarb has cooled you can put it together with the fool bit. Mix honey into the yogurt, whip your cream and fold in the yogurt mixture. Divide this between four sundae glasses or wide tumblers, whatever you have to hand really. Smaller portions in cocktail glasses can look swanky. Now blob in a large tablespoon of rhubarb into each glass and swirl around till pretty, not too much mind! Clean up the tops of the glasses with kitchen roll and serve right away. Top each with a mint sprig if its a fancy do.
Top Tip: If your rhubarb looks a bit green when its done, add one drop of red food colouring to make it nice and pink... shhhhhhhhhhhhh I won't tell anyone if you don't!
