Bank Holiday BBQ: Tatziki

I had a cold this bank holiday weekend, but we still managed a BBQ on the Sunday. It was one of those colds where you feel ok in the middle of the day, so we had the BBQ early and chucked our guest out at eight when the cold was starting to get at me again!

We had some chicken tikka kebabs, tatziki, and GF pitta breads. Phil brought some salmon and we stuffed the fillets with chopped up herbs, capers and lemon zest so the skin was on the outside. He had also made some GF lamb burgers with 'stuff I had in the fridge' at a guess I would say they had some onion, herbs and spices, GF breadcrumbs and tomato puree in them. I don't usually do lamb but I had a go and it was very yummy, lovely with the tatziki!

To make a big vat of tatziki just grate up a whole cucumber, sprinkle with salt and leave to drain in a sieve over the sink. Then blend or chop up some mint leaves with a couple of garlic cloves, if you are blending then some olive oil will help it along. Give the cucumber a squeeze and mix everything with 3/4 of a huge tub of greek style yogurt. Thin with water if its too gloopy. Serve in a wide bowl drizzled with good quality olive oil and some black olives on top if you like them. All you need to do now is toast some GF pittas on the bbq for ripping up and dipping in the tatziki, goes lovely with fish from the BBQ too.

The picture shows our lovely new fire pit, our friends had one and we loved it so much we got one too! This one is £70 at Homebase, its brill cos you can throw logs on it after the BBQ and toast marshmallows into the evening. Bad news is you cannot move it up and down to change the heat, but you can pile more coals up one end to make cool and hot zones to move food to, we managed to cook on it just fine.
