Gluten Free Chocolate Slice

My mum makes a cracking gluten free chocolate roulade, which I will blog the recipe for some time. In fact I think she will be making one for my brothers birthday this Sunday, so I can take a picture too. I have experimented with a few chocolate cakes, what I am trying to attain is a fudgy thick slice of chocolate richness, not a cake really. More of a torte without the pastry. This recipe is certainly getting there.

dark chocolate 200gms
ground almonds 150gms
butter 100gms
vanilla essence 1/2 tsp
eggs 2
caster sugar 150gms

Butter and line the bottom of a 20cm spring form cake tin. Preheat the oven to 180 degrees. Put the chocolate and butter in a bowl over boiling water and melt gently. While that is happening whisk the eggs and sugar until pale and fluffy, this takes at least 5 minutes. Fold in the melted chocolate mix and almonds with a metal spoon and pour carefully into your tin. Bake for 20 minutes. Cool and put in the fridge covered with clingfilm for at least 4 hours, if you don't do this it wont be fudgy, it will be crumbly, overnight is even better.

I made some water icing with 100gms of icing sugar and 1 and 1/2 tablespoons of boiling water. I piped this on the stop using a plastic bag with the very end of one corner snipped off.

Yummy with fresh double cream and sliced strawberry's or raspberries. Next time i think i will add some orange zest, or maybe an espresso.
