Gluten Free Chorizo and Fetta Pizzettas
Pizza is good, I don't mean horrible foam based deep pan American pizza, I mean nice thin and crispy Italian pizza topped with good quality ingredients. You can buy GF pizza bases, but they are like a big circle of polystyrene, foamy and horrible. Better to make your pizza on little flat breads, GF pitta bread is perfect, though nan bread is suitable too (especially for a spicy chicken pizza).
This recipe is easy peasy. Make enough sauce for several pizzas and freeze in small batches so you can make these in a flash another time. I make normal pizzas at the same time on white pitta bread.
Pizza Sauce (makes enough for about 8 pizzas)
small white or red onion 1, finely chopped
garlic cloves 2, finely chopped
tin of good quality tinned tomatoes 1
dried oregano 1 big pinch
red wine vinegar or balsamic 2 tsp
grated nutmeg a pinch
salt and pepper
Pizzas (enough stuff for 4)
GF white pitta or nan breads 4
red pepper 1, sliced
red onion 1/2, sliced
feta cheese half a block, cubed
chorizo 8 thin slices torn up (check its gf)
Parmesan 2 tbsp, grated
dried oregano, or fresh basil
First make your sauce. Saute your onion in olive oil till soft, add the garlic and cook for one minute, then add your tomatoes and other ingredients. Simmer for 30 mins till thickened. This will need more salt than you think to taste good and rich. If your tomatoes look a bit pants add some puree too.
Now make the pizzas. Pre-heat oven to 200 degrees, fry your onion and peppers off in a pan. Stab the breads all over with the tip of a sharp knife, this stops them puffing up. Put breads in hot oven for 2 mins to crisp up a bit. Take out and top each one with a thin layer of sauce, some torn chorizo, peppers, onion, and feta. Top with a sprinkling of Parmesan and herbs. Put back in hot oven for 8 minutes or until the feta has browned a little.
I cook mine direct on the bars with a tray underneath to catch drips, or on a pizza baking tray that has holes in the bottom.
We also do these with mozzarella, parma ham and pineapple topping. Enjoy!
