Thank you so much for this amazing recipe! I tried it out this morning and the pancakes were amazing. I'm Scottish and I never thought I was going to be able to eat a real pancake again (crepes are nice, but they are not the pancakes from my childhood). These were perfect!

I have been asked to make smoked salmon blinis (GF) for xmas lunch nibbles - 60 of them (big family) and do you know if the blinis can be stored ovenight in the fridge or frozen and thawed still be in an acceptable state? I plan to assemble them on xmas day but I would rather not have to cook the blinis on the day.
